For over 20 years, Paramount Farms has distributed its pistachio and almond products to diverse overseas markets. Our international team currently manages a large global network of agents, brokers, distributors, importers, exporters and direct customers. Paramount Farms' international sales comprise nearly a quarter of the company's total sales volume.

Raw pistachios are not created equal. We have the BEST pre-processed, raw pistachios in the business due to the way we dry the pistachios.

Sun-curve™ Drying

Statistical process controls ensure that pistachios are always hulled and dried within 24 hours of harvest using a proprietary Sun-curve™ drying technique, resulting in the best raw pistachios available.

  • Create an oven (i.e., gas-fired dryers) drying curve that mimics the sun dried drying curve with a max product temp of 54.4°C
  • Ensure quality by performing regular taste tests with Sun Dried control batches
  • Ensure repeatability though multiple pilot tests
  • Enable plant to handle volume of pistachios in a timely fashion with the right ratio of peelers to dryers

No other processor has the ability to ensure both the appropriate drying time and processing speed

All pistachios need to be processed within 24 hours of harvest. If there are not sufficient dryers, peeled pistachios will have to be dried too fast

Note: mBTU per dryer is 1.72; Calculated as number of dryers divided by number of peelers - more dryers enables the right drying approach
